One of my favorite childhood memories was going to the local Friendly’s for an ice cream treat! We got to share the tradition with Mio the other day… Judging from her reactions, I think it’ll be a favorite of hers, too!
Dan and I brought home a little treat for ourselves, too! The Friendly’s Watermelon Roll is a childhood favorite of mine, and it features lemon sherbet on the outside, watermelon sherbet on the inside with chocolate bits.

In trying to recreate my favorite, watermelon sherbet, I ran into a slight problem. I couldn’t find a decent recipe to save my life. Virtually any fruit can be turned into a sherbet, but I couldn’t find a recipe for watermelon. The best recipe for sherbet I found was from Cook’s Illustrated, but it was lime sherbet. Limes are no where near the same as a watermelon so I completely winged the recipe. Guess what though, it worked!
